In Portable 3rd they show the true raw damage for each weapon, so all the starter weapons all have 50 power (or whatever, I don't remember the exact number).
In all the other games the weapon power the game shows you is the weapon's true raw damage stat multiplied depending on the weapon class. It's why Greatswords and Hammers always show a high damage stat in-game; their multiplier is like x5 or something.

It's nice to have the true raw stat but neither are super helpful alone. On weapons every different attack animation has it's own 'motion value' which acts as a modifier to (usually) reduce the damage. Very few attacks have a motion value of 100% or even close. A lot of attacks only apply something like 30-40% of your true raw damage. Some weapons like switchaxe are really deceptive, they show relatively high attack stats but have pretty poor motion values on most of their attacks.

Slowness is an integral part.
Monster Hunter isn't a fast-action button masher. It's about economy of movement, recognizing the time various moves take and calculating what is best for the situation. Mastery of said system let's you do things like a full Greatsword charge on a monster that isn't stunned.

I've played Tri, 4U, and I'm currently playing X but I can never manage to get into the series enough to get to G rank.
On top of that, early game is a drag. It's there to help you get your inventory established for the later quests, as well as to serve as a tutorial for newcomers, and I can't really fault them much for that. But at the same time, when you've already played the previous entries in the series, having to go through 1* and 2* quests is a drag when you know the real meat only begins much, much later.

Lock On makes these types of games too easy
The idea behind the maps isn't a "world" per say, so much as each area is a unique arena where you fight the monster. Open world would ruin the game.

Dark Souls relies very heavily on blocking everything or phasing through attacks. MH relies more on positioning, so a lock-on would actually be detrimental since it's much, much hard to gauge distance and target specific parts.

It's less a problem now but when the games were on PSP, or pre CPP, the camera was ass and lock on would've been amazing. It's not like your character would necessarily have to strafe with lock on, just to keep the camera on him.
It would fundamentally change the game, but it could use some mixing up at this point and it would make you feel more like your hunting monsters

Backstabs are king in Dark Souls
Not locking on makes it a thousand times easier to quickly roll behind things to backstab them. Plus it's better for dealing with multiple enemies at once than locking on is, you can angle your swings to stagger multiple enemies easier.
