I got everyone to 5 hearts naturally by doing all the quests as I found them and trying not to use the party members that already had enough affinity for their next affinity quest. If you need more affinity you can always grind support missions, a couple of them give you a good amount of it.

I just crafted a Light Skell and rolled with it to go for all the superbosses, didn't bother to craft my allies any level 60 Skells other than the Excavator I had. Probably not the easiest way to do it but I didn't have much trouble.

It really hurts to play this game. On the other hand, the world is so majestically well done, everything is so alive and the universe is so engaging that one just doesn't stop playing.
And by the way, I think the story is well managed. Chronicle's story was stupidly long and I could barely crawl to the end of the game while X lets you choose whether you want to rush up the end or get deep into the environment.

Postgame has some Support Missions that will raise your affinity various levels and can be repeated indefinitely. These are found the the BLADE Barracks.
Before Postgame, you can try your hand at accepting Gathering requests which you already have the resources for, but that depends on how much you have collected during your travels.
Responding to Soul Voices also will raise your affinity as well.

No, but you can clear the support missions very quickly with a Lv.50 Skell and the Phoenix weapon.
It only took me about 8 runs to get a group of characters up from 3 to 4, and so far I haven't encountered any Affinity Missions that need more than 4 Affinity.
