The demo was only the tutorial. Of course people didn't dislike it back then. None of the cancerous SJW shit was there, none of the stupid trying to hard to be meta story was there, the only characters were toriel and that depressed ghost so you didn't have any of the horrible characters. the game was still easy as fuck but it was a tutorial, too bad the game stayed extremely easy throughout, with only one or two boss fights that are even half difficult.
It's not like the consensus on /v/ changed its opinion overnight just because it got popular. The full game got released and people saw all the stupid shit in it.

I honestly don't care about you guys think. I am the first to admit that /v/ usually has great taste in games, dispite what everyone jokes about. In this case though I have to say you are wrong. It is a work of love that many games lack these days. The last game that had that kind of love involved was Shovel Knight. Also I am judging this as a game. That mean no fan bases and no creator personality. Once you take that away, you have an extremely unique game that is a breath of fresh air, I don't think anyone can deny me that.
