The coolest thing about the game is the setting. Not just the deep lore, or the world building, but actually how NPC's feel alive since they have small character arcs that change as time passes.
Also the setting is not a standard medival fantasy setting, instead it's set in the awkward period right after an industrial revolution, so we find ourselves in a world where knights and people with swords and magic can fight alongside airships, tanks and guns, and it somehow works very well.

The best thing about the game is the writting, it somehow manages to make the world feel very alive since it has some very solid world building, some great characters (including random NPCs who have small character arcs) and a plot that surprisingly is deeper than what you think for a game set in highschool.

It is a core part of the combat with several bosses throughout the series testing your knowledge/skill with the mechanic. The combat would literally be broken without it.

It's not nearly as important as you claim it is. I've beaten both Grandia I and II without giving a single fuck about trying to cancel anyone's attack. If it happens, it happens, but I never prioritized or thought about it.

There is literally zero practical difference between Grandia's "cancelled attacks" and Trails' "delay". The only major difference is that, in Trails, not every enemy is susceptible.
