Because compiling them ALL together would take a fucklot of resources and space. And during that time, the series would be very difficult to get into what with all the consoles you'd need to play everything. As it stands, you can play everything in the series so far on two discs and one console, which makes playing through the games very simple to do right now instead of much later.
Besides, 2.8 has a lot of fully new content in the way of BBS 0.2 and a film about lore. And no matter if they put everything into one collection or not, Square Enix would still make a lot of money off remakes.

I have no qualms with buying 1.5, 2.5 or 2.8.

You must not have been paying attention and that's not exactly what was said there. What was said that Nobodies were devoid of hearts which is still true, it's that they have the capacity to regrow hearts when in the right stimulus/environment. Outside of Roxas who started off with a heart and maybe Xemnas all Nobodies still start off without a heart and therefore are emotionless until the memories they facilitate from day to day life starts to give rise to emotions and then a heart. This is why Xemnas kept lying to them, to keep them vacant to prevent them regrowing their hearts. This isn't a retcon.

If you enjoy the gameplay no, its basically dumbed down DMC without a style meter but replaced with fanservice which is still great. Doing 0xp Proud Runs are near as difficult and as thrilling as DMD difficulty.
The plot is nonsensical and its fine if you're intrigued how batshit it'll get but never take it seriously.
