Bait them into double jumping by dashing and then stopping (guard) before the dash animation ends. Or dashing and countering after you dash if you can tell the opponent will air dash at you.
Counter-dashing has been removed (tested in Demo), but if you dash and can tell your opponent will mash the attack button after you bounce off his guard then just counter him.

Depends on the character.
If you want to get good - learn unblockable attacks and what I call 'awkward' combos.
The 2 main unblockables are 1) After someone jumps, there is a frame just above the middle of their jump (just before they land) where they can't sub or block any attack, once you know it is easy, but you have to try it a few times - it is harder than 2) as if you miss the frame they can sub.
2) If you use an attack that sends someone flying, the same frame as 1) works, but it is COMPLETELY UNBLOCKABLE - allowing you to land free ultimates.
It's why if you use anyone with knockups or air combos, they are good in this game - people don't know this as far as I've found.
You can also land free ultimates if you use support knockbacks - but more people have been aware of this since 2-Gen so it is harder to do against better players, works on scrubs though.
There's other cute shit as well with specific characters but we won't know fully until the game comes out - I'll find it by testing every character, hopefully I can find some more infinites as well.
Now 'awkward combos' - whenever you use a combo, don't mash your buttons - press them slowly/awkwardly - this may seem basic, but it makes it a bit harder to sub and I don't see anyone average doing it.
