I love it mostly for gameplay, though. Sure, the lore/world is great and all, but for me it's the closest a single player game has ever gotten to giving me the same feeling you'd get in a true RPG. Where you can try to go anywhere or do anything you can imagine and the DM will say, "Okay, you can try that. Roll for x." Obviously Morrowind falls far short of that ideal as any video game will, but most other RPGs just have a specific story with occasional branches they want to tell, and will prevent you from doing anything that could possibly interfere with that.
The result with the latter type of design is a much tighter game with a usually more reactive story, but not nearly as much replayability and emergent stories as a game like Morrowind. Sadly Bethesda games have been getting more and more restrictive, to the point where we can't even refuse quests and the majority of NPCs are immortal. I don't know if it should be called the greatest game of all time, especially given that the appeal is not very wide, but it's easily one of my favorites and apparently a lot of people agree.

The gameplay of Morrowind is exploring the world and interacting with it, that's literally it. That's what makes it stand out.
