If you listen to the NPC conversations in 4 it's clear that bethesda has removed the original games from the canon timeline.

Not him but according to old lore cats are extinct and Jet was invented by Myron. Cats on the other fucking side of the country I'll give them but Jet being a pre-war drug is a problem for most people. In my case I just assume Myron lied and found the formula somewhere and then proceeded to use it to get free hookers and blow. (or materials for making his own)
These or other things are not enough to say the originals are not canon, just Bethesda not caring.

They don't care because they know their customers don't care. They are like a factory who churns out a product and only care about the product selling and not its quality.
If it hurt their name, sales or image then they would care but people who have played the previous games are and always will be a minority. Even among NV fans.
This is even after Beth started selling the old games and they still don't care. They know casuals will just buy the Mini Nuke collectors just to boast what big fans they are. They know only new wave casuals will buy it because original fans already have them.
From those who got the re-edition no one will play Fallout 1 and 2.
