Try parrying them. Silver Knights are piss easy to parry. Alternatively, if you want to be worse at the game, equip your highest stability shield, and attack them with a spear/thrusting sword from behind your shield. The lightning spear you probably got in sen's funhouse should work fine for that.

Try a 2-handed jumping attack. You'll probably take a hit, but you shouldn't get interrupted. If you don't outright oneshot him, he will definitely get pancaked, making a followup shot easy.

Never had troubles with the archers. Got killed a few times, sure, but mainly because the demons were kicking my ass. Once I decided to rush past them I had a much simpler time. The archers will miss as long as you're going forward. And you only need to roll through 2 very avoidables arrows and hit the knight quickly to succeed.

The secret is to roll INTO the arrows, once you can do that it becomes trivial.
Just make sure to be careful once up close, don't rush it, go when you're ready.
Oh, and go for the knight on the left first, one of the pillars will be able to block the other knights line of sight allowing you to waste the first knight. It'll give you time to regain your nerve for running at the second one.
