Big Boss didn't like that name at first, since it's a reminder he killed The Boss. So when people wanted to call him Big Boss, he asked them to call him Snake, or Vic(tory) Boss.

The characterization of Big Boss in Peace Walker is loosely based around Che Guevara. The latter's most famous quote, in English, is "Until victory, forever". To this day, leftist movements in Latin America do the V hands sign in reference to Che Guevara.
In Peace Walker, the MSF soldiers and Sandinistas start seeing Big Boss as a successor of Che (this is not made explicit, but in one of the cutscenes a soldier says something that implies it). This is what makes them coin the term "Vic Boss", the Vic for Victory being a reference to Che.
