I've heard mixed reviews saying it was fairly lackluster.
At the same time, I love the idea of monster hunter esque combat with an MMO-party twist.

I think in MH terms, these 12 Eidolons are just the "Elder Dragons" of the game. The official trailers have shown other things that can't just be generic enemies. Like Gilgamesh.

I heard you can wear the skin of various FF mainline characters. Do they do anything other than just be cosmetic? Will they give my access to their overlimits?

Progressively unlock. Mission Ranks 1-4 have job trial missions that unlock them. Then some of them are locked behind achievements of sorts (get beastmaster after creating 20 monster pals, Red Mage after unlocking Curaga, Firaga, Graviga).

A lot of the early JP dissent on the game was that they expected Monster Hunter, got CC/MMO instead. If you're more of a MH purist, I'd wait for NA feedback.
Another huge complaint was that there's too much goddamn travel. Unlike MH, this game has one huge map. So imagine the entire MH island being one gigantic segmented map. If you're sent on a dual hunt of say Agnaktor and Glacial Agnaktor, in FFE terms that means you choose to start near the volcano, then after finishing Agnaktor are on your own to trek the entire way to the tundra on foot.

One of the videos I saw the dude gender swapped from an option within the game itself, so character regret potentially fixed any time.
But most of the shit I've been listing and talking about I've gleaned from the JP wiki/random youtube videos/trailers. JP got a huge demo that carried over into launch, so I guess there's a small chance character regret option was just in the demo before becoming final in retail?

Looks like the point of Beastmaster is the way the monster buddy system works.
Can't just go creatin' monsters friends all willy nilly. You need their soul stone which you'll have to farm by killing the specific monster a bunch. Beast Master's special ability is an attack that will up the drop rate to 100%.

Probably comes down to job innate abilities.
A dedicated White Mage has an innate threat reduction on their heals and has an ability that will regenerate AP to party members.
For damage, Black Mage's thing is that the lower their AP, the stronger their magic.
Sage has an overall AP cost reduction and then the Concentrate charge up the next spell.
Wouldn't surprise me if Sages hit harder in general, but BLM ramps ahead towards the end of their AP bar, making them play a little more risk/reward.

Actually, I think I misunderstood. Looks like BLM just gets an "Attack Magic" AP cost reduction, might be stronger than Sage's general AP reduction, but no longer plays on that risk/reward of fighting low on AP.
Red Mage gets the AP/Damage increase scaling. On top of Chainspell which reduces cast times for 30 seconds. So Red Mage has the risk/reward play of riding on low AP to maximize damage.
