Dark forces is fun for a Doom clone.
The others are a poorly polished outcast/academy. I'd still recommend playing them just to see how far the series progressed.

I was always bothered by the total emptiness of the world in the Jedi Knight games. I mean in one part of the game (first game I think) you had to run through all those apartment blocks and all of them were totally empty... I was almost depressed because of that feeling of loneliness

This entire board is obsessed with lightsaber combat like that's all there is to a star wars game. Dark Forces 2 not only had a great story, but it actually felt like star wars, and it didn't make your guns totally useless after you get a saber and some force powers. It also stressed the light/dark paradigm, and cut you off to dark side powers and vice versa.
Outcast has a passable story, JKA had none. If you're looking for pure multiplayer you play JKA.
