It's hard to pick one on the SNES. Either FF VI, Chrono Trigger, Live a Live, Terranigma, Rudra no Hihou or SMT II.
Non-RPG, I'd say Kirby Super Star or Super Bomberman 3.

I really fucking love the SNES version of Tales of Phantasia, even though the Playstation version is vastly superior.
I just think that the SNES version is much more impressive from a technical point of view, given that they crammed in so much stuff and details into it.
