Morrowind could be replayed at least one, to account for Morag tong or thief's guild and do/ do not kill viviec. Also houses. Actual genuine choice that changes how the game plays out
Oblivion can be played a ton of times because of top tier mods plus at least one nehrim playthrough
Fallout 3 now it goes downhill, a lot to explore but it can mostly be done in one play
Skyrim again, mods may carry this game. One regular play through or until you get bored theb maybe one with heavy gameplay, quest and maybe the survival mods as well.
Fallout 4 as 2D as it gets playthroughs and even individual choices are the same. Can't make a case.
Dishonored full stealth mode is challenging and full murder mode is fun as shit, worth two playthroughs, no reason to do more

BioWare games are always boring as shit on second playthrough. Every one of them has some sort of mandatory tutorial level and traditional BioWares medicotiry starts to shine through when a game can't suprise you.

I'll make a case for Bethesda games:
In Fallout 3, you can make a number of different builds that are all equally viable, you can't unify the traders if you don't have a high Barter skill and a majority of the side quests have multiple solutions and outcomes.
In Skyrim, you can't see both sides of the war in one playthrough.
As for Fallout 4, there's no defending it.
