Why do people think that Save the Princess stereotype is wrong in video games?

The thing is to get the genderbend story you would need a Fujoshi to kidnap some good looking/rich guy, and then you would impersonate some average looking girl trying to beat the Fat lonely landwhale, just to get to fuck the good looking/rich guy.
And women don't want to work to get what they want, in their version of the game they would be the kidnapped prince while you watch the other characters kill themselves and have adventures while you just stay comfy in a dungeon with your legs open waiting to be penetrated.

the appeal of the simple style was to invite everyone to interact. people are shitty at editing, so if they edit a shitty thing the style stays intact.

There's the other part of the interview where he talks about why Mario and Bowser can duel to the death in some games then play tennis or hold a party in another, and he likens them to actors in a production. /v/ went nuts with this, "everything's a play, deepest lore" but the idea is that they're an acting troupe where every character has a part to play, the same way you have "stock characters" in theater. Mario plays the hero. Bowser plays the villain. Princess Peach plays the motivation.
Mario could go platforming for any silly reasons. Maybe he just wants to be a treasure hunting adventurer like Wario. Maybe he just wants to fuck shit up. But we go with the easiest one, rescue the princess.
People have interpreted this relatively benign setup as the gender relations-equivalent of blackface and bigotry, rather than just generic cipher characters providing context for moving sprites/polygons.
