Pretty much. Though you won't be able to unlock Warrior until 10+, but nonetheless Fighter->War->MK is not a problem at all.
I've always wanted to get into this game on consoles but i was playing other things at the time. Thinking of going Fighter -> Either Warrior or Assassin with a mage pawn primarily. Anything i should know about?

You can get cast-time reduction both from an augment and a ring. But frankly you don't have to long cast if you don't want to, there are plenty of smaller but faster casting spells and you don't have to fully charge them and the Core skill spam is pretty solid.
