Because as morbid as it all was, it was handled in a slightly silly matter to invoke some dark comedy. I mean, it is centered around a cake after all, and there's many instances of dialogue and situations where it's all handled with comical effect which makes it stand out a lot more since the whole game takes place in a lonely cold facility.
Unfortunately, the humor was misinterpreted and it just completely spiraled out of control. Not even Valve were too appreciative about the cake thing, to the point that they only threw in ONE cake reference in Portal 2 just to end it all.
