Havent played them. but I played the originals and they fixed some stuff and added more in other cases. I have been told KH 2 in critical its another game altogether, fixing tons of the mistakes the game once had.
They have great value for their prices. 1,5 only have the cutscenes of one of their games though (365 days) For some its considered the weakest entry so its really up to you if you want to emulate or skip it.
2.5 its the same with KH coded, also considered "bad" to some people, also it can be called the only one true spin off since its pretty much irrelevant in the plot in general.
Chances are they will release a compilation of both compilations before KH 3 gets release, or maybe not, might as well play them now though.

Main reason is more content, of course. They removed most of the Subsistence extras in HD, like Duel Mode, Snake vs. Monkey (along with the unlockable items that come with it), and Secret Theater. The Guy Savage nightmare is also missing.
The HD version also isn't a perfect port. Some effects are missing, like rain. Some of the music timing is messed up in a few cutscenes, and the pressure-sensitive DualShock 3 buttons suck compared to DualShock 2's. It's much harder to let your finger off the trigger without firing compared to PS2. The 360 version's controls are just laughable, but at least they aren't anywhere near as bad as the Vita version's.
I'm not stupid, though. I'm aware that this is all minor stuff to most people in comparison to the 720p60 upgrade. I still enjoyed HD and it's a far better "HD Edition" than most others. It's just that the little things they got wrong bother me.

That's how I usually do replays of MGS3 (and any other game from that era), actually. PS2 + component cables + CRT = a very crisp picture that looks far better than the muddy mess I get when I try it on my PS3.
