You get most of the features from the patches for free with the DLC just adding extra flavour/mechanics. It's not mandatory but you won't get the full experience without it. CK II is harder than Europa. EU is pretty mindless - as long as you aren't overly reckless you will be fine.

I only want to play the Geheimnisnacht mod on Ck2 and that shit requires a supercomputer to run reasonably well, because the devs "don't want to put limits on the experience" and just keep on adding more stuff to an already gigantic landmass.
EU4 is still not fun after all those DLC.
Victoria 2 is okay, but lacks the dynamics of say CK2 that make playthroughs unique and have interesting stuff happen.
HoI3 is a pain in the ass to set up, due to having to redo the whole OOB whenever you start a new campaign, also the whole playthrough being railroaded as fuck bothers me.
But I do play them, just not right now.

Ck2 interface was terrible at the start, but it got a bunch of overhauls and is actually pretty good these days.

I found it easier to overlook important stuff in EU4, because some functions are hidden in a corner or behind a symbol that you wouldn't assume is clickable.

I'm using dark world so I was trying to never marry and only have children as product of prisoner rape but it seems I kept getting penalties for legitimizing my bastards.
