You fight people using an avatar with an avatar, usually they have healthbars and the view displays the fighters profiles. they have to have high skill ceilings to be considered fighting games.
For example:

Smash Bros, Power Stone are not fighting games as the genre. They're still fighting games technically but have very little mechanical similarity to proper Street Fighter clones, but still the basic premise makes them tournament viable games for EVO and the like.
