Cuting Seath's tail is easy as fuck even with low dps if you know the tactic. I managed to cut it off with the butterfly horn as an int build.
Don't circle strafe him, it will just take forever. Stand at one end of the room to lead him over so that you have plenty of space when you run over to the other side. Wait for him to attack and then run over and do a running attack to his tail. Back off immediately since he will likely do his tail swipe or stamp. Attack the tail again the moment it stop. Then just rinse and repeat.

This was actually one of the more enjoyable bosses from that game for me. DS2. My favorites were the Slumbering Dragon and Ivory King

i played dark souls offline while I was staying at a friends house who didn't have a connection.
i beat it without fighting like 4 bosses.
i feel like I didn't get the full experience.
