I'm at level 25 and I already leveled up my Saw Cleaver twice. Using a strength build(high vitality, high strength, high endurance). When should I think about leveling a new weapon and what should I choose?

I feel like I do no damage in this game. The only way I killed Father Gascoigne and Blood-starved Beast in a reasonable timeframe was visceral abuse.

Any time you want, you can get 3-4 blood rocks easy now without Chalice dungeons
Don't level up endurance much though, the max I ever go is 18-20
Whirligig, Kirkhammer, Wheel are all great

You don't have to do a single one of them. They are the randomly generated dungeons, where you fight some bosses you'll never see in the main game. There is one weapon type exclusive to the chalice dungeons which you won't find in the main game, and you can get the best bloodgems in the game there. Not many people enjoy them.

They're optional dungeons that let you do a procedural generated version of them after you beat them. The later ones are VERY difficult.

only root dungeons are procedurally generated, the main chalice dungeons have decent level design as they were made by From. You should do them as you get them until they get too hard, then you can come back to them.
And yes you need to do them as even just doing the bare minimum to get the trophy will result in a lot of good gem drops.
