He's not like Eliwood, entirely. Both are rather bland, but Ephraim wanted nothing more than to travel and be a mercenary to perfect his lance skills. Eliwood was one of the few lords who wanted to take his father's place and be a good ruler, he just learned fencing to better serve the people.
Personally, I think Leaf has the most interesting story, but that Ike is the best lord. It's funny though cause he's the least lord, but maybe that's why.

I also think it is much better to get into the series in any other way than 8 or Awakening, since they both feature grinding for levels, which completely breaks them.

12 handled it well. The new recruits in the Altean army were your peers, so you learned along with them. Marth was still the main character, you just sometimes saw things from a 3rd person (your avatar's) point of view. There was a ~5 chapter subplot introduced where your character WAS the focus, the rest of the game was Marth's tale. IMO, they jumped the shark with Awakening. Shame, cause I always wanted a "create-your-own-unit" in Fire Emblem as a kid, but I mostly just wanted to make a waifu/self-insert and play along with the other characters, not be the fucking Messiah.

If you start with Awakening, you'll probably get too used to how easy it is compared to the rest of the series. In the worst case scenario you'll only care about it due to the breeding.

4 isn't very hard. Your own units are league's and bounds stronger than the enemy, moreso in Gen 2 (Sety anyone? or the sword twins?). It just plays differently. But, you can even save without emulation. 5 is actually difficult, because of low stat caps (should be a staple, IDK why Awakening had to inflate stats to MMO-tier) and difficult positioning of enemy units. God, 5 is great.
