Honorifics aren't the kind of thing which can be translated easily.
If the game is set in Japan, then it's probably going to be marketed to weebs, who know how honorifics work already. So it makes sense to just keep them in the english script.
If it's not in Japan, then just do the best you can to preserve the meaning without sounding awkward.

Weebs aren't going to use the dub anyway if the japanese audio track is available. The dub is there for people with a lower tolerance for weebshit, and as such I should not have to learn any Japanese to play in English. There are several honorifics which either don't have an English equivalent, or would come across as awkward in English.

Why? It seems like you're setting arbitrary standards against the grain of fairly common practice. Keep in mind most of the games that aren't fully localized cater to a niche foreign market (i.e. the localization team justifiably assumed you're a weeb if you're playing Persona or whatever the fuck).

Some of the honorifics like -san just mean that the word used is a name. Like calling someone John-human. And others might mean superiors or people lower than you or people you find cute... I don't think it's particularly hard to convey these things with context especially in verbal tone, but in text I could see them saying -Chan rather than have a character call them cutey or just put a y on their name like Jeffy or something.
Use slang like bro, gramps, boss, pops, burai, bruh and cunt in place of honorifics

If you see a translation using honorifics, it's not a good translation.
Something I don't think a lot of people get is that there's this fine line you gotta walk when you translate something. Rewriting a script and trying to remove stuff you find offensive (or just loading it with 4chan/reddit memes) is bad but not even bothering to actually put it into english is equally terrible. And frankly, Japanese is stilted and repetitive as shit if you directly translate it without any changes.

I don't have nearly as good of an ear for well-rendered Japanese dialogue as I do for English. If I have to choose between something I'd find distractingly bad if I only knew better and something I find distractingly bad, I'll take the former.

Sure it's not easy, but that's a translator's job.
If you got a character named like Michael Jackson, and the game calls him "Jackson-san" or "Jackson-chan" or "Jackson-kun" then you can translate it as "Mr. Jackson" or "Mikey" or "Michael."
Are those perfect? No, I won't pretend they are. I'm not a professional translator and even if I was I'm just making a quick example of what I'm trying to say. But just leaving the honorifics in shows a lack of effort and will make the conversation make less sense to the reader.
And I know someone is gonna say that if you're playing japanese games you should already know honorifics, but that's just a bullshit copout and leads to things like this being considered acceptable.

That's only true to an extent. The Japanese have a completely different cultural paradigm that both informs and is informed by their language. While it's possible to intimate similar sentiments of relative status in speech pattern, it can only approximate because the pervasiveness of status in Anglo culture is very dissimilar to the Japanese.
Honorifics usually denote a relationship/sense of respect/closeness between characters that's lost if they just call each other by name.
