Rainbow Six up to Raven Sheild, everything after moved away from realism completely. Ghost Recon 1 and its expansions Island Thunder and Desert Siege are very fun for more military outdoor stuff. S.W.A.T is very popular also with a lot of folks.
More modern stuff is Insurgency and Squad by the looks of it. Some kickstarters have looked promising but they turn out to be mostly vaporware.

When I got my technical training for the army, I got to use a lot of simulation equipment, but there's no way anyone could get any enjoyment out of using them. If you actually enjoying doing the stuff in the simulator, you would like actually working on the equipment in the field, since you have more leeway with how you go about working with stuff and you get real feedback when you succeed (like people calling you on the phone/radio).
