Why wouldn't an Evangelion game work?
Apparently, the only thing that matters in games anymore is story (look at TW3, bad in all regards except story) so theoretically the game would thrive.

There have been at least two Eva visual novels that are essentially all story.
Spoiler alert: the stories in them aren't particularly good.
A story focused Eva game wouldn't do a better job than the show, so why bother?
A gameplay focused game, if it wants to be remotely faithful, would have to be a boss rush kind of thing. Maybe add some RPG social interaction something.
But boss fights are hard to do well, and harder to make replayable.

Uh, that's pretty fairly in line with what most people say about Eva. I think the reasons people call it a deconstruction (Shinji the protagonist is a weak fag, piloting is horrific, the heroes universally hate themselves, etc) have become common place, so they don't feel as compelling nearly 20 years later.
But no matter what you feel, if you interpret "deconstruction" to mean "make fun of" no wonder you don't get it.

the word is overused in a lot of cases, but it fits eva pretty perfectly. It takes all the tropes of a giant mecha series and presents them all, but in twisted ways. It even does this in smaller ways, like the classic shinji falling on naked rei scene. In any other series she would have gone red faced and slapped shinji, but instead she just gets up and goes on with her day. She doesnt slap shinji still later when he insults his father.
Taking audience expectations based on trends in previous works and then subverting those expectations. thats the definition of a deconstruction.
