Aside from that there's the shadowrun games, VtMD (how the fuck can you have DE on there and not this), System Shock 2, Transistor (not really an RPG but neither is bastion), older RPGs like Baldurs Gate and the earlier divinity games, FO: New Vegas, Underrail (Rail not Tail ), Wasteland, and many many others.
Don't worry, basically everything you've listed there aside from Gothic is just entry level shit. There are still plenty of good WRPGs out there.

The mechanics aren't that complicated, the menus just make them look nightmarish. The weapon smithing mechanic is actually pretty linear and boils down to 'get two of the same, combine them to get the next level up.' And everything else is:
