It's quite simple.
Mimic proportion should be constant. Too few mimics, you'll forget about them, too many, the element of surprise will disappear.
Therefore, as the number of mimic types increases, the number of time you will see that particular breed of mimic decreases. Consequence: major loss of time for the player who will spend a needlessly long amount of time hitting stuff without gratification.
