But most monsters stop attacking you when they realize you're harmless and they don't pursue you when you flee. If you "befriend" them they often heal you and give you stuff after or during the encounter.
Also in their defence, most humans they have come in contact with were hostile so they have the right for self-defence too.
Not only that, considering all the npcs in the game a monsters too, less than half of the actual monsters you meet in the game are hostile towards you.

Half-true. Some monsters are legitmately trying to end you. Also, in regards to the "attacking past the sparing point", there's two ways to spare monsters- pacify and satisfy. Pacify is to make them not want to fight anymore, by beating them up fulfilling some other objective. The other is satisfy, which is to help them out and make them feel better or otherwise incapacitate them. Pacifying a monster still locks them in battle, while pacify completely nulls their attacks.
