The game has aged extremely poorly in terms of graphics, so if you aren't of the age group to have grown up with the PS1 in your life at some point, I don't really blame you for not liking the way it looks. That being said, the writing, despite the translation, is good enough and the characters are interesting enough that for most people they can get past the graphics and learn to enjoy the game.

I'd say that more than anything it's the world building.
The characters are likable and the setting is insanely fascinating.
And then there's the little things.
Mini games, cut content, item locations, side-quests. There's so many little details that enhance the game, I feel it gives it a shine that a lot of games don't have.
You can tell a team of desperate ambitious nips had no life for a couple years making this.
And you can tell the development process is day and night of what it is today. There's a lot more easter eggs and variation in the details. In fact a lot of the styling is all over the place. It goes from steampunk to Cthulhu mythos.
But that's fine, it stimulates a young mind.
You probably can't experience it the way us kids did back then, but you can still enjoy it casually. Besides the combat system has aged well and the story, if slightly fragmented is still captivating.

I remember the first time I played FFVII, I was half-playing it with a friend who introduced me to it. Eventually I started playing alone and just talking to him about it. I got to nibelheim and I was CONVINCED there was something behind that door vincent is, I even think I was expecting a character (don't remember if the coffin is visible from outside).
I was a stupid noob ofc so I didn't get close to solving the riddle, but I would ram my head against that door, grind around it in case the mobs dropped a key and go around the mansion clicking things
