Exploring a world, expanding an empire, exterminating hostile empires and exploiting resources. Creating an empire out of nothing is what I'd call the general appeal.

They're not very simulative.
In civ2 you have Zulus, Vikings, Chinese, Americans, and you all start a few thousand years before bc and then tech throughout the ages.
Most often in a randomized map.
Total War and Grand Strategy games are more historical in this respect.
You still have the same general feel of progress in the three different genres. You pass the turn, or let the time go forward as your empire grows.
Total War and grand strategy usually don't really have two of the X'es in 4x as far as I've seen.
Exploration is barely a thing. It's sort of there, but not really in the EU since the map is still the same while it is constant throughout a 4x game for everyone.
Expanding is barely there in gs either and only when you colonize. There's not much strategy that comes into that compared to city placement in a 4x game. One colony doesn't negate another potential colony, or lessen its value like a city would in a 4x.
Exterminating(defeating opponents and taking their lands) and exploiting(using resources, teching, specializing, min/maxing) is what the total war and grand strat already have.

If you want to compare them then:
GSG: Real-time strategy with pause/speed up function that plays out on the real world map. Shitty combat, decent diplomacy and lots of spread sheets. Every game has a different time period. Different focus in every game. Crusader Kings diplomacy, Victoria economy, HoI combat.
TW: Turn-based on grandmap with real-time battles. Good battles, some city management, diplomacy is a joke. Different time period every game.
Civ: Turn-based, randomly generated map every time, decent diplomacy, decent-turn based combat, simpler economy than gsg, a lot more light-hearted, starts in the stone ages and ends in modern times. More comfy and less stressing than the other two.

Happiness
Which social policy trees do you go for? I often go Tradition, Honor and then Science, seems the best way if you're playing with only a handful of cities

Liberty, but I usually dip into Tradition and Honor as well.
For Oligarchy and Warrior Caste.
Oligarchy saves a ton of gpt if you're going ICS and putting a mil unit in each city.

Religion (and the piety tree) can actually net you decent money.
Culture is always relevant, because more pollicies means more bonusses.
There are also ways to get more science and food from your faith.
You can strengthen your units and cities, or buy units and buildings with faith instead of money/production.
And last but most importantly: Happiness, either through special buildings, or through passives.
Even if you dont want to invest much in faith, at least get a little of it, or make sure you get another civ's religion.

It's also a good way to help you get a diplomatic victory. You spread your religion to two or three other civs, and found World Congress, bribe a few city-states, and boom! You can pass world religion without a hitch - suddenly you're 2 delegates ahead, and with the political framework to push through a world ideology when it becomes an option, getting you two more.

The nuke usage comes from Civ1 I believe. He was supposed to have a 1 in Nuke usage but whoever was coding him must've hit two buttons and no noticed so Gandhi ended with 11 or 12 IIRC.

I really recommend to check out Endless Space too, it's the only alternative to the Civ series that was fun to me.

The same appeal as city management games, with a strategy and competitive component. Also the historical context lets you play out wacky alternative history scenario's. It's all turned based (at least with civ) so you don't have to pay top much attention. Very low barrier of entry but high skill ceiling means there's something engaging for most people, gramps can slaughter everyone he doesn't like on settler and enjoy the music and graphics and flavor while Timmy the wiki warrior with 7 UI mods can metagame an espionage economy with spreadsheets.
