Move set matters more than anything. short/long are solid move sets.

I've always heard that it's this great weapon but with only C dex scaling and relatively weak base damage the decent moveset hardly seems worth it. I'm trying to run a relatively glass cannon mage and I plan on enchanting a weapon later in the game. I started Deprived, so far with 20 points VIT, 14 END, 12 ATN, 12 DEX, 14 INT.
Since beating the Bell Gargoyles the estoc seems really weak, even +5. I only net around 30 points of dmg vs most enemies each stab. Granted, I've not put much into DEX but if I'm going to enchant the scaling is going to suck anyway. Should I hang onto it for late game enchanting power or go for something else? I was personally thinking dumping some points into strength for Moonlight Greatsword or some other cool looking big anime sword. Maybe depending on Heavy Soul Arrow is my best bet until I can enchant my weapons with spells (before magic ember)?

Estoc is great. Compare it to straight swords like Longsword with C/C scaling.
It's a rapier, meaning it can be used while the shield is up. You can also use it to poke like a spear or longsword when two handed. It also has a sweeping attack that no other rapier has.

I say go for it; I'm playing through it now for the first time after loving the shit out of DaS1 and honestly it doesn't deserve the bad rap it gets on /v/.
A lot of times it goes for quantity over quality and tries (and often fails) to mimic DaS1 at every turn, but that doesn't stop it from being a genuinely fun game. I always hate the phrase, but "It's a good game but a bad X game" really applies here. Its super fun, but when viewed through the lens of the tight adventure DaS1 was it falls a bit flat.
It has its low points, with unfair enemy placement and poorly designed areas (WHO THE FUCK DESIGNED THE SHRINE OF AMANA FUCK) but overall I'm having fun. I just got the King Ring which I assume is a pretty big deal.

I did. What a fucking mistake. I'm going to be honest with you, it's a lot different from Dark Souls 1. Enemies in groups of 3 or 4, even 6 sometimes are common. The level progression is shit. There isn't much in the way of early armor or weapons. I haven't seen any magic shit yet having beat two of the first bosses. There are fucking exploding barrels everywhere that constantly blow up. Half of the content is "LOL DARK SOULS IS HARD" and I'm not even kidding. That's all anyone in the game says. You're punished for dying; you lose up to half your health if you die a bunch. So you can't even fuck up when they made it a point to try to fuck you up. If you want to level up you have to use homeward bones to go back to the bonfire or else you will lose your souls because the enemies are fucking stupid. Rolls don't work the same at all. You can't riposte. The enemies will spin like tops if you try to backstab. The setting doesn't make any sense. The NPCs have the slowest, most boring dialogue and all of it tries to be exposition while saying nothing.

The games calls it Atribute Bonus, you can see it in your inventory when you get the detailed view of a weapon.
It's basically the effectiveness each point in Strength/Dexterity/Intelligance/Faith will have on your weapon.
- = nothing, Leveling this stat will do nothing for this weapon
E = Terrible, almost no bonus from that stat.
D = meh, Leveling that stat will have a small increase in damage from that weapon.
C = Decent
B = Good
A = Excellent
S = Have as many points as you possibly can in this stat for using this weapon since each point has a huge affect.
Most weapons have STR and DEX scaling, weighted differently (EG Scrimtar gets E scaling from STR and B from DEX, so having high Dex is good, and Str will help a little) although some only have STR or DEX scaling.
Weapons that have non physical damage will have FAITH or INT scaling.

I never beat Dark Souls quit at Sith, got bored. Hoping to actually beat Bloodborne so I can say I beat one of these games, I did the same thing to demon souls and dropped dark souls 2 fast after renting it.

Two handing Scimitar, later Furysword. Only the lightest possible armor because I saw some video about superfast rolling if you can get close to 0 equip, and /v/ said to roll. Never used a shield because I liked the twohanding damage increase. Capra was the worst boss in the game for me.

I always do a faith/Halberd character as my first since DeS. I miss my mirdan hammer
every weapon in ds3 has a unique combat style. no more copy pasted sets

I'm going to assume you either meant Sif or Seathe
If it's Sif then stay under his legs and he literally can't hit you
If it's Seathe then just break the crystal thingy behind him so you can actually hurt him
