For me it was the Hitman series. Picked up Bloodmoney for cheap back in 2011 - thought it was boring and shit. Later replayed out of boredom and really got into it. Now the whole series is one of my favoriteseven enjoyed Absolution (for what it was).

Final Fantasy XII
The first time I played it I found it pretty dull and dropped it around the Henne Mines. I started a new game like two years later and got completely into it, to the point where it's one of my favourite games in the series.

On topic, Dark Souls for me primarily. It took several restarts before it really clicked. Also Monster Hunter. After a few missteps with MHFU and MH3, my MH4U file has over 300 hours on it.

I booted up Monster Hunter Freedom 1 for the first time, looked around town for a while, killed one Aptonoth and quit the game.
About a year later I was bored and tried again.
I've got about 650 hours in MH games.
Chrono trigger believe it or not. Died before I figured out how to save, didn't play it again for a couple of years

Hated the first game for a long time.
Started it again last year and actually had fun with it, eventually played the rest.
It's one of my favourite FPS series even if the story is crap.

Liberty Island is way more fun on later playthroughs though because you can goof around way more, especially if you go for runs where you kill everyone you see. The real slog is the Paris catacombs.
