Grey morality does not work in the star wars universe - it works best when it's black and white, good and evil. Or Red and Blue - not good and evil but still opposing sides. KOTOR 2, apart from being unfinished was just a confusing mess.

I'm not false flagging, and KOTOR1 isn't perfect either. KOTOR 2 is Chris Avellone attempting to make a universe made for children try to seem realistic. It didn't work, largely due to the fact the game is unfinished.
An Obsidian Trek game would be incredible. But the game itself is built on a Dark Side/Light Side meter, extremely binary whilst also shoving the grey morality down your throat. New Vegas for example doesn't have that - it has reputation systems, and the karma does nothing.

Honestly it is still star wars and still a video game so it can only be so deep but the fact that people rebel so much against any depths or any exploration of established universes makes me sad.

But that's my point: It literally isn't. No matter what the dialogue says, the game mechanics have a good-bad binary morality system. While you may be right that vidya will never achieve a perfect depth, I think two games have done it right.
