I either can't hear, and half to read them. Or while I'm turning it up I miss something because I can't read them. Or it's way too loud, and I lower the volume but can't see subtitles while doing it.

Well, what's the difference between that and just an in-game cinematic viewer? As long as it doesn't actually fuck up the game, I don't see a problem. You can't even argue it spoils the game, because you could just not watch them.

In defense of the use of movies; depending on how the engine itself operates it might be that the're not able to 100% recreate a cutscene using in game scripting. video files are not a great alternative, but they'll play back exactly how you want 100% of the time.

At least, that's my half assed justification. I'm more of an audio guy than a video one.

It's just good practice to pack data rather than having all the media in their own playable files. If one of the files got corrupted or deleted, it could mess things up.

I changed the opening of the game to the Evangelion x Dark Souls video. It fit pretty well.
