Well, they're perfectly playable in vanilla state (at least when it comes to mechanics) but:
>need some simple modding to run it on any new machine
>need some more modding to make it run at more than 10 FPS
>Need a little bit of additional modding to make it look really good.
Also if you are used to modern games and identify Souls games as "challenging" you'll be in for a surprise. I could beat Gothics as a kid with my eyes shut, but when I came back to it year ago I was utterly raped by every other character/enemy I ecountered.

I'd put Mass Effect 3 at a close second. I loved the world building effort they put into the first game, it still felt like good 'ol Bioware. Than shallow ass Mass Effect 2 happened and it just lost the spark. 3 attempted to bring some of it back but too late.

Play The Blue Marlin for NES. If you have a Wii get Fishing Resort. If you have a Dreamcast get Sega Bass Fishing. Those are great starter games. The more "arcade-y" the gameplay is the better. If you want a full blown sim then play Bassin's Black Bass on NES then the rest of The Black Bass series since those actually have decent gameplay and rock solid controls.
For hunting if you have an old school style TV then Duck Hunt is always a classic. Otherwise the best way is get a Wii and start with Big Buck Hunter Pro, which is one of the best light gun games ever made. In general try to stick to light gun centric stuff. Other types of gameplay don't fit the genre as well. Pheasants Forever Wingshooter on Wii is probably the closest we'll ever see to a modernized Duck Hunt (that doesn't suck). The Cabella's games on the system are also really well made, but most lean more toward simulation. Cabela's Dangerous Hunts 2013 is an on-rails safari hunting game of decent-ish quality, and both Cabela's Monster Buck Hunter and Cabela's Trophy Bucks are split between "career" (sim) mode and "arcade" (shoot shit) mode and are both okay-ish.
For sport shooting there's tragically few options. Barker Bill's Trick Shooting on NES and especially Hogan's Alley on NES are cool if you have an old TV. Target Reload on Wii, which I love but most people consider pretty mediocre, is their closest modern equivalent. There's also Wild Gunman on NES if you like the idea of a dueling/fast draw game.
