I feel like I'm kind of missing something here, my cookie output has plateaued a lot and there are no useful upgrades in sight. Is there something important I should unlock?

Don't stress too much OP, at the end of the day cookie clicker is still just an idle game. The game will speed up as you get heavenly chips/prestige.

Do what this anon said and make sure you get the crumbly egg upgrade when you ascend.
A number will appear next to the legacy button when the blue bar reaches the end, that's how many heavenly chips/prestige levels you have.
