Sticking to the formula of the most successful existing entry and waiting until sequels to try out legitimately new shit is a pretty common thing for any game/movie/etc. that attempts some sort of reboot, jump to a new genre/medium (ie 2D to 3D, etc) and so on. Zelda:OoT and Metroid Prime were pretty much just LttP and Super Metroid in 3D. The Force Awakens similarly rehashes the shit out of A New Hope.
Not saying that it's good or bad or anything, just that it's a ridiculously common thing.

At least read up on the events of the original game. The second game's story depends on an understanding of the first story.
The original KotOR does not have a great story, but not knowing the story will severely reduce the enjoyment you get from the second game's story, which would be a shame since it's pretty good
