She's extremely annoying and you'll have to deal with more of her shitty poetry if you do her S. Link, you won't get every S. Link done on your first playthrough anyway, and if there's kne you should put aside, it's definitely hers.
Most importantly, by doing her S. Link you will get an epilogue that takes away any impact the ending may have had on you. The epilogue in itself isn't bad, but it's more of a bonus than anything ajd it coming up right afer the end, which provided closure, just feels off.
You also get an additional dungeon by doing her S. Link and an extra romance scene with any of the girls, but none of that is good enough that you can't just save it for a second playthrough.

Stay away from /v/ unless you want literally everything spoiled. Also don't expect the case to just unfold for itself. You will need to decided who to pursue at the end and if you get it wrong it's game over with a bad ending

It might have been my imagination, but do you not get less of her poetry if you don't do her S. Link? I didn't go near her on my first playthrough and I felt her poetry was much less frequent than it wss when I did do her S. Link.
Kanji, Yosuke and Teddie all have awful epilogue designs, but the others are okay and the events of the epilogue are not bad either.

Make sure you always bring a correspomding Persona, so equip a Chariot Persona when you spend time with Chie, for example. You're not going to get everyone done, but to get as many people done as possible try and finish each dungeon in just one day, some of your party members won't be available when you still need to finish a dungeon.
You won't be able to do S. Links with people at school during your days off, so try and get as much done with those before the Summer break.

I wouldn't really recommend trying for a perfect playthrough your first time, you'll suck the fun out of it and if you've already made decent progress then you've probably already fucked up. Just pick the links you like and go with them.
If you're really set on trying then here's some advice from the /smtg/ pastebin:
Try and prioritize links that don't appear often, these include:
>Eri (Temperance), who has no special events to raise SL level and is generally easy to forget about
>Old Lady (Death), who can only be done on Sundays although her rank is guaranteed to raise each meeting; can only be started after reaching SL4 with Devil
>Adachi(Jester), is available at inconsistent times and the max you can get is 6 before getting a bad end
Generally try to avoid doing Chie's, Yukiko's and Yosuke's during daytime if you can do someone else's since they get a lot of special events that raise SL (especially Chie) and can be done during breaks; also low priority are SLs that are available on rainy days (Hermit, Sun) and the Strength SL which is available very often.
Also save before doing Moon/Ai's SL, it's weird.

Death is super easy, just go talk to her every Sunday and the rank is guaranteed to go up.
I can understand forgetting Eri, her SL is pretty out of the way and you don't otherwise meet her in the plot.
In general, try to put less priority on Chie, Yosuke and Yukiko as they get a ton of free SL points. Also if you're doing NG+ then you should have your social stats carried over so you can spend the time doing nightime SLs like Devil and Tower.
And just remember to finish Justice and Hierophant before November
