Running it through DG Voodoo is the best way. Check the forums/guides, there are AMD Fixes, music fixes and such. It's well worth the effort.
It should be mentioned that the other Dark Forces/Jedi Knight games have zero problems with newer versions of windows, though Jedi Knight is the best of them in my opinion.

DiRT has a later game that's much more true to rally racing than 3's arcadey racing. Look at the other games in their catalog and check thrle reviews to see which ones better.
M&B is really fun, but you have to make it yourself on single player since its literally open world. You can decide to be a warlord, trade goods, actually aim for a seat of power, or marry some noble lady it's all up to you. And there's the cRPG MOD if you want multiplayer persistent character progression, earning money for gear and allocating skill/attribute points

Depends on what you're asking for. Again, the story is pretty short, probably about as long as Korra. Again, that's fucking irrelevant, as it has a lot of challenge missions and a deep as fuck combat system with proper difficult encounters that'll keep you playing for 40+ hours anyway. In my opinion it's one of the better action games Platinum has released.

I would pass on Shadowrun Returns and Witcher 1...
Until you play Dragonfall and Witcher 2, and can then go back to them the next time they're on sale if you liked the sequels.
Dragonfall is generally more fleshed out than Returns: Returns is kind of like a strategic level pack in comparison. The Fallout Tactics to Fallout 1.
Witcher 1 has a clunky dated engine and very complex gameplay. I would play Witcher 2 and maybe read some of the books so you get into the setting more, and so are more motivated to learn how the game works; otherwise it can be frustrating diving into it raw.
