AC1 - Interesting tech demo with a sorta interesting plot
AC2 - Great game that improves on pretty much every aspect of the original. Gets open-world action adventure right and has a lot of variety
Brotherhood - AC2 Part Two
Revelations - AC2 but worse
AC3 - Awful
Black Flag - It's a fun pirate game that occasionally forces you to do dumb assassin stuff
Everything else - Haven't played them, haven't heard anything good.

It was all black and white until 3... In 3 the assassin was an arrogant, revenge fueled asshole who got his people, and Americans killed, while the Templar crew was genuinely making efforts to protect human lives by manipulating the conflict into resolution... Also 3 dropped the plot line of the Templars causing the catastrophe and changed it to SOLAR FLARE! Unless you touch a button. God 3 sucked and ruined the future story telling of the series
It was in AC3. In AC1 they were more or less painted in the same light, the AC2 games didn't explore their goals and motivations. AC3 is where they really hammer it home that Templars want meritocracy and really know what they're doing, whereas Assassins are just naive dumbfucks and borderline anarchists who have no immediate goals of their own, they just fuck with the Templars.
