They aren't going to ditch the world map. Trying to make it in X, XII, or XIII style would actually take more work, since they would have to figure out how to implement chocobos and all the secrets that they open up into account.
Entire portions of the games pacing would have to be redone to accommodate hallways. The advantage of a simple world map to essentially 'skip' set pieces won't be overlooked and with how fast they will need to get this game out, SE won't let Nomura go ham on it.

But I will also say this again. Nomura doesn't have time to re-envision all of that side quest stuff into a hallway oriented setting. For the first disc it is exactly like this. Buggy allows you to get Great Gospel and then after Disc 2 opens, you finally get the Highwind and can go almost where ever. But there really isn't much of anything in the places you have already been and the only places left are Mideel and Icicle Inn. Chocobos get you to all the secret places where Materia is hiding, not the Highwind.
