Thin bloods are vampires that do not fully show all the traits of a clan, some even have mismatched parts of clans since you make them with just about anything in the tabletop.
Ghouls are humans strengthened a bit as long as they keep receiving vampire blood, and enjoy slowed aging while under the effects.

Yes, they are less affected by things like sunglight and can wake during the day easier. They also have problems embracing others and usually seem dead for a long time before awakening as vampire.
They are usually very weak compared to normal vampires but can also develop strange powers and create their own which mostly only ancient vampires can do.
In the tabletop a thin blood could actually become a real monster if they sucked they leeched their way up the generations. Good luck with that happening though.
