I'm guessing the deal was that they felt he'd done enough for laying the foundations of XV and that Tabata had proven himself capable with Type-0, and his presence was far more important for KH3 and VIIR.

Honestly as I get older I feel these game's stories are a lot skater than they're given credit for. You have to get over a huge cringe curve with the Disney characters and all that but only on a surface level.
Kingdom Hearts theme is about this concept "hearts" that is different from one's soul, mind, and body. It seems to always know what you truly want, but it's hard to understand and also easily manipulated. Hearts are formed by experiences and memories that people share, which is why even Nobodies eventually gain one of their own over time. Ansem the wise once said "there are hearts all around us" because everywhere there's a memory shared between someone and something. Sora and Roxas are the same body and mind, but they're experiences made them almost vastly different.
It also makes sense that the villains are insane scientists trying to fully understand the heart and have manipulated it, created puppets and injected them with other's memories to try and recreate their heart as well as their body and mind. All to reach the heart all of world's and all things "Kingdom Hearts" which would ideally give you every heart to ever existed' experiences. Making you the wisest to ever exist.
I think the reason this theme was chosen was BECAUSE of the Disney stuff too. Many people have many found memories of Disney movies. They grew up with them and they might have taught you lessons or helped form who you are, even in very subtle ways. They're part of our hearts.
