I wouldn't necessarily say Hunters is something to avoid, for what it was it was okay (especially the demo) but yes the SP was bad and Nintendo WFC is dead as far as the DS/Wii goes, so it's limited to playing with bots and others locally.

I liked Postal 2 when it was released and have peeked at it a few times since but it's a fairly poor playing game--style over substance in the South Park vein of anti-PC humor. Does Paradise Lost fix anything with the gameplay (give weapons more weight, make damage more of a concern, etc.) or is it just more VO and settings?

It's still pretty much the same stuff, except they realized how great the melee weapons were in Apocalypse Weekend so now the game is filled with all kinds of blades and saws which are overpowered as fuck. Hedgecutters, chainsaws, etc. they're cool and will mow down everybody and everything. You can also go "guns akimbo" in Paradise Lost, as in hold any gun in your both hands. Postal Dude carrying two nuclear bazookas will make a mess.

Like all NES games, if you didn't play them first, the only way to appreciate their quality relative to when they were relevant is to play them after more recent titles in the franchise, should they exist. For other titles, more recent games in the genre will also give the player something to appreciate and enjoy in these more rudimentary games.
Ep. 1 is only not in optional because you need it to really get Ep. 2 and Ep. 2 is 10/10.
