I always have, on a mechanical level KHII blows 1 out of the water.
But Final Mix fixes the difficulty and balancing problems that vanilla had, as well as adding a ton of new content.
FM is basically 10x more enjoyable than vanilla.

KHIIFM has the most added content. Like a full expansion. KH1FM and BbSFM are equivalent to a small DLC pack.

Europa Universalis 4 is the easiest Paradox game to get into. Crusader Kings 2 isn't too hard either, and it's a much better game
then there are games like Nobunaga's Ambition and Romance of the Three Kingdoms from Koei. Pretty sure the Total War games have some elements of gs in them, so they might be an okay entry point
