It's to show just how much stronger your character got, and at the same time saving a cool enemy design from being wasted.
This only happens to early game bosses, which are usually rather simplistic encounters and aren't important story characters or anything.

Well, let's take Bethesda games for an excellent example.
You have five active missions on your roster, and you'd like to take care of a couple of them, so you pick the side mission (B) you acquired as a stepping stone while you were continuing the main mission (A). You accidentally stop to talk to an NPC and pick up another mission (C) by mistake, and so have to cross the entire province you're in to complete it.
By the time you're done with that first side mission, you've got an extra six missions for the one you completed. Like, I love Skyrim and everything, but damn.

Perhaps a better idea is, "if you try doing too many side quests at once in a Final Fantasy or Tales Of game, you lose track of what the fuck is going on anymore." Since those games usually don't set up reminders for what you were doing the last time you played.

Well, I haven't played Tales Of, but in FF there's usually not really many side quests, if any.
And yeah, of course, in games without a quest log or a journal of any kind, it's harder to keep track of what quests you have currently active.
That's where good old pen and paper come in. More games should make the player make notes on their own, without relying on magic compass and shit. Of course, this should be used in moderation as well.

Sorry, I meant the games in that series like Tales of Symphonia, Tales of Zesteria, Tales of the Abyss, etc. It's just like in Final Fantasy--if you want to get the Ultimate Fucking Weapon, you need to kill x number of each monster first, and nothing anywhere tells you how many you've gotten or where you need to go. Then there are others in which talking to certain people unlocks special parts of the map or something, but doesn't say who you've talked to. Leads to a lot of frustration and aggravation when the papers I jot down the info on get lost.
