I'm playing Resident Evil Remake for the first time and this is my first RE game
Should I choose the guy or the girl and which difficulty is normal?
Also general Resident Evil thread I suppose

Jill.
She's easier, and a bit better designed & written. In the very original RE1, she was the "easier" mode, Chris the "harder". All in all, she's the better choice for rookies, as she has more inventory space and gets a lockpick early on.
The very highest difficulty, "Mountain Climbing", is the Normal mode. They added the lowest one (calm walk, or something) to the HD version, and it is literally the "Very Easy" according the end results.
You need to unlock the Hard difficulty by playing the game.
Jill is easier to play and is a qt, but Chris encounters best girl Rebecca.
Mountain climbing is normal. Hiking is easy. The remaster added another one which is very easy. Harder difficulties are unlocked later.
If playing the remaster make sure to enable tank controls, the default controls are broken and made for casuals.

Jill has more inventory space, and nice ass and titties so it's your basic instinct to choose her first.
But that's your brain working in reverse. Chris has the better, canon (sort of) story, and provides a better challenge. Jill is the dessert to Chris's main course, if you follow me.

Start with Jill Valentine, especially if it's your first time playing an oldschool Resi-game or REmake. Just makes the experience tad smoother for beginners.
If the game runs poorly for you, start by lowering the Shadow Quality to Low. This has the least visual impact on graphics. Locking the fps to 30 can help with possible jumpy framerates.
If that does not help, look up how to manually adjust the game's Rendering Resolution from:

And before you ask: the Knife's pretty much useless, as usual. Stash it away ASAP.

Actually it's the Jill's Good-ending route that's became canon to the rest of the series. And overall, I find Jill's campaign to be less cheesy and overall better paced.
The difference in brainpower required to play the game is staggering between RE1 and RE6.
You basically needed the same level of brain grey matter as a Taxi driver navigating backstreets in London to beat RE1 without opening the map every 2 seconds.
Meanwhile in RE6 it's just hold up on the joystick until you reach the next cutscene.
Where did it all go so wrong?

I didn't choose it my first play through and I seriously regret it, because the Mountain Climbing has more "things" happening that makes it a much better game. I won't spoil.

She's good for unlocking the guns though. Did this on my first attempt after taking my time beating it with Chris. Didn't even break a sweat.

You should choose Jill on your first playthrough.
Jill = More inventory slots, lockpick item, less tedious and more fun to play
Chris = Everything is more tedious and annoying but you headshot zombies more often and always carry one of the two items needed to burn zombies, encouraging killing them over survival.
Only shooterfags prefer Chris.

Nah, the knife is good for the first hour because it's the only time there are more zombies to kill than their are the bullets necessary to kill them. The knife saves a couple bullets here and there. Once you've gotten good enough to comfortably dodge, it becomes useless.

The game is much smoother on Jill's playthrough. Chris has a lot of running back and fourth. If you don't mind a little more Backtracking, go for Chris's.

Chris has more health (+30%?), a decent Knife and you may play as Rebecca now and then, also less inventory space , simple locks must be open with "keys" that occupy said already limited inventory space(6 slots).
Jill has the best guns and Barry helps you now and then. She has a lock-pick that opens simple locks. 8 slots.
