Playing Animal Crossing starts to feel like a chore after a few months. One of my favorite villagers moved away and I checked out, haven't actually played since like March.
What kinds of things would you want to see in a new Animal Crossing game /v/?
New species?
New kinds of towns?
New mechanics?

Snake villagers. They have no arms and carry items with their tails.
Bat villagers who can be seen flying overhead like balloons and they get mad if you slingshot them out of the sky.
Kiwi bird who gets mad if you give him Kiwi Fruit.
A new special villager who is a cobra in a basket who plays the flute. He will provide you with rare music tracks and can jam out with KK.
More japanese folklore based villagers. Kapp'n is cool but i'd love ones based on different yokai.

Legendary/famous villagers like a Dragon, Hydra who is two villagers in one, Werewolf who only goes full werewolf under full moons, another human who is a pop or movie star, Hikikomori bear who never leaves their home but can give you rare video game collectables etc

You have to approach it with a relaxed attitude and avoid trying to do everything within a day. It's not for everyone but I managed to get a very solid year of interactions with anon's here and managing my town+house.

Bats and Snakes are exactly what I was going to post. The rest of your suggestions are also great.
My suggestion would be a sort of restaurant thing. It starts out small and grows like Nook's Cranny. Eating there will give you a perk for the day (I.E. more likely to get rarer furniture, makes fishing easier, maybe slightly faster running speed.) Occasionally the chef will ask you to find/buy him certain food items for a special meal that gives you multiple buffs for the day. When it's fully upgraded you can get a job working there.
Final thing I would add is some kind of special event once a week, even just minor ones. There seriously needs to be some kind of reason for me to come back and see my town more frequently.

Just gotta wait for a decent deal to come. They seem kinda shitty at the moment. So far there's one going for $250AU with Lego Marvel Super Heroeswhich I already have on PC and can't be fucked owning a second copy, let alone it note being an exclusive titleand another for the same price but some Adventure Time game.
