I've never played a Final Fantasy game and I'd like to change that. Which one should I play first. Additionally, what platform is best emulation/steam/etc

Well there's the big three on playstation, seven, eight, and nine.
All of them I reccomend, even eight. On ps2 there's ten, which was recently remade for the ps4 in hd, so that might be your entry point.
Tens sequel is.. an aquired taste. Some people hate it, like me, but others love it.
There's also final fantasy 6 which is on the snes and easily emulated.

Hey there, friend! You probably should have asked this on /vr/, they're better at this kind of thing. I'd recommend starting with Final Fantasy V or Final Fantasy VI for GBA with the restoration patch on VBA-M. These games both have great sound, art, and game design and are considered the best in the series by many. If you don't mind playing old games start with 12
13 is ok, but especially for its mythology
10 is ok too
I personally started with side games like tactics advance (still my favorite so far) before I even got to the main series.
I would wait for 7 remake if I were you because 7 badly aged.
I would also buy FF Type 0 (i really liked it) but get it on PS4, I hated the PC controls. You get to play the FF15 demo, that is pretty nice too.

When you end up playing IV, either play the PSP, GBA, or DS version. I'd recommend the PSP version though.

2 wasn't that bad, or at least, the remake wasn't that bad. The levelling up system was kind of shit, but it was an interesting take on the genre.
Just don't play the remake of 3, that shit is frustrating and slow.
